Crustless Quiche

It wasn’t until I was in my teens that I was introduced to quiche. I always thought it sounded so fancy. Quiche. But you know what it is? A giant egg pie. But it’s so good. In our house, quiche is eaten for any meal. It’s perfect for breakfast, lunch, or dinner. This is a basic recipe that you can load up with whatever tasty veggies and meats you like. I make ours with just egg whites.

Crustless Quiche

2 cups eggs (roughly 16 egg whites)
1 cup cottage cheese
1/2 cup veggies, cooked
1/2 cup diced/shredded meat
3/4 cup shredded cheese
salt and pepper to taste

Preheat oven to 375*F.
Beat eggs and cottage cheese together.
Mix in cheese, veggies, meat, salt, and pepper.
Pour into an oiled 9 inch pie dish.
Bake for 45 minutes.

So far our favorite combinations have been sausage & spinach and ham & broccoli. The monsters didn’t even complain about eating something green!
