Pumpkin-Oat Muffins

I love fall. The leaves change colors. The nights (and days) get cooler. It’s sweatshirt season. And of course, pumpkin flavored everything! Yes. I am one of those nuts. I love pumpkin. Which brings us to my favorite pumpkin muffin recipe!

Pumpkin-Oat Muffins

Ingredients:
1 cup pumpkin puree
2 eggs
1/2 cup vegetable or coconut oil
1 teaspoon vanilla extract
1/2 sugar (optional: plus more to sprinkle on top)
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon pumpkin spice
1 cup flour
1/2 cup rolled oats (optional: more for sprinkling on top)

Directions:
Mix puree, eggs, oil, vanilla, and sugar thoroughly.
Add salt, baking powder, baking soda, and pumpkin spice and mix.
Mix in flour.
Fold in oats.
Fill muffin tins 3/4th full.
Optional: sprinkle tops with additional sugar and oats.
Bake at 375*F for 15 to 20 minutes.
